It’s in the Bag

14 days.

That’s how many shopping days you have left till my birthday. Just a friendly reminder. Also, in case you are in need of gift ideas, I did receive the majority of the items on my wishlist for Christmas, however, I still don’t own a Kate Spade bag so that’s always an option…Have you seen this one?

If there is a heaven, this is the purse I’ll carry with me there.

Oh, you’re right. There’s no way I’m getting in to heaven. Still, I think it’s a pretty versatile bag and could work for me in hell, too…

So, I took a look at my 2012 goals this week – something I figured I should do at least once before December 31, 2012 – and decided I’d get to work on a few of them. So I signed up for this:

The Chi Town Half Marathon.

What am I crazy?! You know I am. But don’t worry, Julia’s going to carry me across the finish line. This was, after all, her idea. I think she secretly knew I’d go to the website and see the words “beer” and “swag bag” and be sold. Well played, my friend. Well played.

I’m actually pretty excited about it. And this will be my first half marathon. I’ve run 5K’s, 8K’s, 10K’s and a marathon. But never a half. You know what a new race distance means, right? Instant PR! Awesome. I’m just checking stuff off my list like mad. Achieving all my 2012 goals? It’s in the bag.

Okay, that’s a tad overconfident. But at least I know I’ll be able to mark two of my goals off come April 1st. Which already feels awesome.

I’ve also been kicking butt with my planning/cooking goal. I’ve brought my salad in a jar lunch everyday this week and at night we’ve been cooking dinner and eating leftovers like champs. Zero take-out orders. Which is definite progress.

My favorite dinner thus far? It’s a tough choice, there’s been a lot of deliciousness created in my kitchen lately. But if I have to choose, I’ve got to go with the buffalo chicken sliders I made recently.

You may remember my first try at these, which resulted not really in a buffalo chicken sandwich, but more of a habanaro ranch chicken sandwich. Let me just say for the record, it’s definitely worth making an extra trip to get the Frank’s RedHot Buffalo Sauce. It just is. You were right, Megan.

I love this recipe, which I adapted slightly from allrecipes.com because 1) It’s super easy 2) It involves my crock pot and 3) It makes a ton of food so there’s always left-overs.

Crock Pot Buffalo Chicken Sliders
4 skinless, boneless chicken breast halves
1 bottle buffalo wing sauce, divided
1 package dry ranch salad dressing mix
2 tablespoons Worcestershire sauce
1 tablespoon garlic powder
1 tablespoon butter
8 mini ciabatta rolls

 

Place the chicken breasts into a slow cooker, and pour in 3/4 of the wing sauce, Worcestershire, garlic powder, and the ranch dressing mix. Cover, and cook on Low for 6 to 7 hours.

Once the chicken has cooked, add the butter, and shred the meat finely with two forks. Pile the meat onto split ciabatta rolls, and splash with the remaining buffalo wing sauce to serve.

Spicy deliciousness. You should make these. And invite me over. Because, like I said, it makes enough to share. I’ll bring wine. What goes with buffalo chicken, red or white?

Not only do you put up with my awful food photos, ridiculous attempts at fitness, and gratitous stories about Roosevelt, you put up with my broke-ass website and keep trying to come back for more, despite constant error messages.

    I told ya that you were awesome in the kitchen because those buffallo chicken sliders look amazing. I wouldn’t even know where to start with these! haha. So excited that you signed up for the half..it’s going to be awesome!! Hopefully it’s the same weather (and not a blizzard going on).

      I’m super excited about the half! And I’m excited to race a new distance. As for birthdays, I milk them for all they are worth. Last year is going to be hard to top considering my sister took me to Vegas and my friends threw me an awesome party – but regardless I know it’ll be great! :)

  6. Congrats on the signing up for the marathon! I am a die hard Franks fan! Anything that is suppose to be Buffalo style needs Franks! After all I know because I am from Buffalo and as a teen I worked in a pizza joint! I’ve made Buffalo sliders too and oh man do I love them! I love your twist with the Ranch dressing, I normally place that right on top but not in it! Great idea, I’m going to try that!

    I have been researching web hosting, who are you going through? I haven’t a clue on what to do. Are you sticking with WordPress for your platform? I hope when I do switch everything is the same. I wish I could just hire someone to do it for me! Good luck to you!

    By the way, if you don’t get your Kate Spade bag for your b-day, buy for yourself for your marathon reward, but only after the race! Maybe set yourself a personal marathon goal and if you meet it, buy the purse. Oh hell, who am I kidding? Just go get the purse, it will make you happy!! Have a great weekend!!

      I’m definitely a Franks convert! I’ve got a couple of bottle stockpiled in my pantry now!

      Web hosting is so frustrating/overwhleming. I am planning to stick with WordPress and I’m looking into companies that do web migration. So far I’ve requested quotes from move-my-site.com and ezsitemove.com – I’ll let you know if I decide to use one of them. I’ve heard BlueHost is one of the best web hosts when it comes to blogs and am leaning that way.

      As for the Kate Spade bag, I’m loving your idea! I think it would be an excellent reward/gift to myself for finishing the race! :)

      I’m glad to know I”m not the only technically challenged blogger out there! But you’re right, bribing myself with little treats like lattes makes dealing technical difficulities a little easier!
